I am interested in using iJoomla Magazine for it's layout and author management features, but I am not running a magazine site per se.  There are no separate issues, etc.  Can I run iJoomla mag as a single publication with a single issue and have that be the default homepage when a user logs in? (I am building a subscription website)

Does iJoomla mag use the sections/categories defined in Joomla to define sections of the magazine/nav?  Or do I define those sections within iJoomla?

Yes, you can use it that way. As a matter of fact, in the home page of this site, we are using it in that way.
iJoomla Magazine uses joomla´s sections and categories.
You can see a demo here (tester/tester).
